Skillet Pesto-Potatoes and Eggs

3/4 cup finely chopped potatoes1 slice bacon, cooked and chopped¼ cup onions, diced¼ cup red peppers, diced1 tbsp. prepared or homemade pesto1 whole egg1 tbsp. parmesan cheese, grated½ medium grapefruit
Spray skillet with cooking spray and add potatoes, onions and peppers. Cook until golden, about 12 min., turning once. Toss potatoes with pesto and bacon and put on plate. Spray pan again and cook egg as desired and place on top of potatoes, top with cheese. Serve with grapefruit.
