Chicken and Vegetable Kabobs (40-30-30)

5 oz chicken or turkey breast, cubed (weight before cooking)3 tbsp teriyaki marinade, bottled (Kikkoman, Chung King, etc)1/2 cup sweet onion, cut in 1-inch pieces8 cherry tomatoes, whole1/2 cup green or red bell pepper, medium1 zucchini (about 5 to 6 inches long), cubed1/2 cup applesauce, unsweetened2 cups mixed salad greens1 1/2 tbsp salad dressing, bottlede, full-fat
Using bottled teriyaki sauce, marinate chicken cubes for 15 to 30 minutes. Cut vegetables into bite-size pieces. Alternate chicken and pieces of onion, whole cherry tomatoes, pepper, and zucchini on metal or bamboo skewers. Broil or grill over hot coals until done. Make sure that chicken is cooked through until white, not pink or red. Do not overcook. Serve with applesauce and a mixed green salad with your choice of dressing.
