3 ripe bananas, mashed2 eggs, beaten2 cups flour3/4 cup sugar1 tsp salt1 tsp baking soda1/2 cup walnuts, chopped
Mix all together, bake in a greased loaf pan at 350 for 1 hr.

I used this recipe as a guide and it was good ... I replaced the flour with WW pastry flour minus 1 TB, adding in 1 TB steel cut oats (per DH's request). Used 1/2 c of sugar + 1/4 c brown sugar blend. I forgot to mix in the nuts, so they ended up baking on top ... yet still good. Baked 45 min. - 10/2/11
