Turkey Meatloaf/Veggie Muffins

Ingredients
1.2 lbs of Lean Ground turkey burger 1/2 cup of dry Stove Top Stuffing Mix1 large Egg1/2 of Med Zucchini, grated1/4 of med Onion, diced1/2 of med carrot, grated1/2 can of Diced tomatoes-no salt added1 stalk of celery, diced
Directions
Spray muffin tins with PAM. Mix all ingredients together. Using a 1/3 measuring cup portion mixture into muffin tins.

If you prefer, you may puree all of your vegetables before mixing. This is a great trick for sneaking more veggies into your food without picky eaters and kids knowing.

Top muffins with a fancy squiggle of BBQ sauce or Ketchup.

Cook on 375 degrees for 30-35 mins.
