Decadent Egg Sandwich

Ingredients
Egg, fresh, 1 jumbo Red Ripe Tomatoes, 3 slice, medium (1/4" thick) Bread, whole wheat (including toast), 2 slice Swiss Cheese, 1 slice
Directions
Place bread in toaster. Heat non-stick skillet over medium heat. Add egg to pan, covering with a lid. Slice tomato. When toast is done, lay open-faced on plate, placing swiss on one side, tomato slices on the other. Sprinkle tomato with salt and pepper if desired. When egg has reached desired doneness, place on top of Swiss, then cover with the other slice of toast and tomato.

The combination of lightly-melted swiss, fried egg, and fresh tomato gives this dish a much more decadent taste and texture than it's calories imply!

Serve for breakfast, lunch, dinner, or brunch; easily expanded to accomodate more servings. If more veggies are desired, top egg with sauteed onions, peppers, or fresh spinach.
