Vegetarian Creole Red Beans and Rice

16 oz (1 lb) Small Red Beans1 medium Onion chopped1 medium Red Pepper chopped2-3 Celery stalks chopped3 Garlic cloves1 1/2 C. Vegetable stock1 T. Olive Oil1 T. Zatarains Creole Seasoning1 T. Old Bay Seasoning
Soak dry red beans over night or in boiling hot water for 1 hour.
Rinse beans and set aside.
Chop all vegetable and sautee with the olive oil till onion is translucent. Add beans, seasoning, vegetable stock and enough water to just cover beans. Cook until beans are soft and tender, about and hour. If you want beans to be creamy add a bit more water and cook longer, about 10-15 minutes.
Serve with 1/2 cup brown rice.
