Sweet & Sour Beef

Ingredients
1 lb ground beef or turkey (I use turkey)3 cups cooked rice1 green bell pepper1 15oz can pineapple, drained (reserve juice)1/4 cup packed brown sugar2 Tbsp cider vinegar1 Tbsp flour2 Tbsp Soy sauce3/4 cup catsup1/3 cup pineapple juice (reserved)
Directions
Prepare rice per package directions.

Brown ground turkey, drain & set aside.

Mix the brown sugar & flour in a sauce pan. Add the vinegar, pineapple juice, soy sauce & catsup. Heat & stir until it boils and thickens. Stir in the pineapple, green pepper, and ground turkey. Cook until hot. Serve over rice.

Serves 4 with 3/4 cup rice & 1/2 cup sauce.
