Pork Fajita Filling

12 oz pork tenderloin1 tbsp cumin1 tbsp paprika1 tsp chili powder3 Tbsp soy sauce1/4 cup lemon juice1 red bell pepper, cut into strips1 green bell pepper, cut into strips1 onion, slicedsalt and pepper to taste
Combine spices, soy sauce, and lemon juice, and marinate pork in them for 20 minutes.
While marinating, saute bell peppers and onions in pan sprayed with nonstick spray. Set aside.
Saute pork mixture in pan until pork is thoroughly cooked. Mix in bell pepper and onions until everything is coated with marinade.
Makes 4 servings. Serve in a whole-wheat tortilla or over rice. Top with cheese, salsa, or sour cream, if desired. (these items not included in nutritional info)
