Taco Lasagna

1 pound extra-lean ground turkey1/4 cup chopped onion1 cup water1 envelope taco seasoning1 15oz can black beans, rinsed & drained1 15oz can Mexican diced tomatoes, undrained6 8-inch flour tortillas1 16oz can fat-free refried beans1.5 cups shredded Mexican 4-cheese blend
Cook the turkey in a large skillet with onion until meat is no longer pink. Add water & taco seasoning, bring to a boil. Reduce heat, simmer uncovered 2 minutes. Stir in black beans & tomatoes. Simmer uncovered 10 additional minutes.
Place 2 tortillas in a greased 9x13 baking dish. Spread half of the refried beans over tortillas, then half the turkey mixture over that. Sprinkle with 1/2 cup cheese. Repeat layers. Top with remaining tortillas & cheese. Cover & bake at 350 for 25-30 minutes or until heated through and cheese is melted. Cut each tortilla stack into 4 pieces.

STARRYROSES
A friend of mine made this before I started SP and it was a hit with kids and adults alike. From my experience making lasagna, I would recommend putting 1/2c of the meat mixture on the bottom (between the pan and the tortilla). I think that would make cutting that lower layer of tortilla easier. - 7/6/14

Super yummy! I made it pretty much to the letter, except that I used corn tortillas because I had those on hand (bonus, fewer calories), and I used my own spices rather than a taco seasoning packet (brings down the sodium). This dish was heavy and filling. I also topped it with some salsa. Delish! - 10/27/12
