Rhubarb Muffins

Ingredients
1.5 cups Brown sugar2/3 cup Canola oil1 Egg1 tsp Vanilla1 tsp Baking soda1 cup Milk1 tsp Lemon juice1.5 cups Rhubarb2.5 cups Flour
Directions
Mix sugar, oil & egg, add vanilla.
Mix milk and lemon juice, add soda.
Combine all together.
Add flour, stirring as you add.
Pour into 18 muffin cups or 2 loaf pans.
Bake at 325*F

Muffins- 30-35 minutes
Loaves- 40-45 minutes
