Chicken stew

Ingredients
chicken breasts, onions, mushrooms, carrots, potatoes, barley, chicken broth, can of cream of mushroom soup, olive oil to brown
Directions
Chop one potato, carrot, onion, and chicken breast per person. Saute the onions, and brown the chicken chunks in the olive oil. Add the broth and other ingredients, simmer for an hour or more.
Why is it that what would be a normal meal for one person if separate, in a stew goes twice as far?
