9 eggs2 cups fresh spinach1 med onion chopped1 clove of garlic chopped1/2 tbs oil1/2 tbs buttersalt and pepper3/4 cup shredded cheese-colby jack mix 2%
heat oil and butter in a broiler proof skillet. Saute onions and garlic then add spinach and cook until done. Scramble eggs in a bowl and add salt and pepper. When vegetables are done add eggs and cook on medium. Run the spatula around the side cooking all of the eggs until almost done. Broil the skillet for 1-2 mins then add cheese to top and broil again until done.
