Chicken Mango Stir fry

Ingredients
2 boneless skinless chicken breasts, cut into small pieces2 mangos, chopped1 tsp ginger root, sliced1 red bell pepper, sliced1 quarter of a large napa cabbage, chopped1 bunch of green onions (spring onions) roughly chopped.2 tbsp oil for cooking (preferably ENOVA oil -- won't burn at high temperatures)
Directions
Add Enova oil to wok (or large frying pan). Brown chicken in the oil at high heat. Add ginger, pepper green onion and cabbage. Stir fry quickly until veggies are tender. Add mango and cook a little bit.

Serve with a cup of fluffy rice and eat with chopsticks!
