Coconut Ginger Sweet Potato Sauce

Ingredients
One med. sweet potatococonut waterorange juicegingershredded coconutsalt/pepper
Directions
Bake the sweet potato in its skin. If you have less time, cut into thirds or quarters and boil in the skin for about 20 minutes. Drain, cool, remove skin.

Boil coconut water, milk, OJ, and ginger to a boil, then cook on LOW for 5 minutes and remove from heat.

Puree the sweet potato and the liquid mixture together. Add salt and pepper, mix in shredded coconut.
