250g Macaroni1 Tbsp Margarine1 Onion, Diced2 Rashers Shortcut Bacon, Fat-Trimmed, Diced2 Tbsp Plain Flour2.5 Cups Lite Milk2 Tbsp Tomato Paste2 Cups Cooked Skinless Chicken Breasts (Cut Into Bite-Sized Pieces)100g Low-Fat Cheddar CheeseTOPPING0.25 Cups Dry Breadcrumbs100g Low-Fat Cheddar Cheese
1. Cook pasta in boiling water until tender. Drain.
2. Melt margarine in a large saucepan and saute onion and bacon.
3. Add flour and cook for 2 minutes.
4. Remove from heat and add milk gradually.
5. Stir over heat until thickened. Remove from heat.
6. Add tomato paste and mix well.
7. Add pasta, chicken, cheese and tomato and mix well.
8. Pour into a later, greased, oven-proof dish.
9. Combine breadcrumbs and cheese (topping) and sprinkle over the top of the dish.
10. Bake in a moderate oven for 20-25 minutes or until golden brown.
