Thai Green Curry with tofu

1 cup Chickpeas or Butter Beans1 cup Green beans, sliced1 cup Coconut Milk (Lite)1 sachet Thai Green Curry sauceLime juice to taste50g cornflour1 cup diced soft tofuServe with cooked Basmati Rice.
Makes 4 main meals.
Cook broccoli and green beans until just tender. (I do mine in a zippy bag in the microwave for a few minutes.) Add canned beans, curry sauce and coconut milk and heat through. Add a bit of water if needed to increase sauce, or add more coconut milk, if you can find the lite variety. Add tofu cubes. Dissolve cornflour in a bit of water to make a fluid paste. Add to pot. Bring to the boil, stirring gently until creamy and thick. Add a squeeze of lime juice and season to taste.
Serve with fragrant rice.
