Caprese Salad

Ingredients
3 medium tomatoes1 pound Fresh Mozzarella3 tbsp extra virgin olive oil12 leaves fresh basilsalt and pepper
Directions
About 4 slices of tomato and cheese equals one serving. Serves six.

Alice tomatoes and cheese into 1/4 " slices. Arrange on platter alternating tomato, cheese and basil leaf. Sprinkle with salt and pepper, if desired. Drizzle with olive oil.

    AMAZING. I have also sprinkled about a tablespoon of balsamic vinegar on top and it really adds to it! Perfect with grilled cheese and soup for a light weekend lunch, but can be added to a lot of dinners as well. - 8/22/11
