Heather's Yummy Omelet

Ingredients

1/2 c. egg beaters1 ounce fat free feta crumbles1/4 sliced mushrooms1 c. fresh spinachfresh ground pepper5 cherry tomatoes, sliced
Spray a small, non-stick pan with cooking spray and turn heat to medium. Add mushrooms and cook until soft. Add spinach, gently turning until wilted.
Transfer mushroom mixture to another plate and add egg beaters to pan. Grind pepper over top of cooking egg. When egg is set, add mushroom mixture and feta to 1/2 and flip the other half over. Turn heat off and let sit a moment while cheese gets warm.
Carefully slide off onto a plate and top with sliced tomatoes. Enjoy!
