Ingredients
2 1/2 cups white rice10 oz. Chicken Breast (boneless, skinless)1 1/4 Cups Cream of Chicken Soup1 1/4 cups 1% Milk1/2 cups reduced fat sour cream1 1/2 chicken bouillonToppings:1 1/4 cups shredded cheddar cheese1 cup diced tomatoes1 cup diced peppers (all colors)1/4 cup sliced green onions1/2 can crushed pineapple1/4 cup sliced almonds1 cup chow mein noodles
Directions
Make rice
Cook chicken breast and dice in bite size pieces. For sauce, mix together soup, milk, sourcream, bouillon and chicken.

The rest of the ingredients are toppings.

Serve buffet style and each person builds their haystack. Rice first, then sauce, then toppings as desired.

This is a family favorite! If I had low cal/low sodium soup, I would use that instead! It's also a dish that I have never measured each ingredient.. so I've tried to "ballpark" it instead. Enjoy! I've guessed that the above amount would serve 5 people.
