Beef Chop Suey

Ingredients

5 Cups sliced Celery1/2 cup diced Onion1 Cup Sliced Water Chestnuts! Cup Sliced Bamboo Shoots2 Cups Fresh Bean Sprouts1 Lb/16oz. thin sliced top sirloin1 Tbsp Extra Virgin Olive Oil1/2 cup Soy Sauce1 Tbsp corn Starch1/2 cup water2 1/2 cups dry Minute Rice (3/4 Cup cooked rice per serving)
In a Wok or Large Frying pan add Olive Oil.
Once oil is hot add onion & beef until brown.
Once the Beef is cooked, add Water Chestnuts, Bamboo Shoots and Bean sprouts. Mix together and once temperature is up again add Celery & 1/4 cup of the soy sauce. Cover and steam celery until cooked but still bright and crunchy.
In a small bowl mix 1 tbsp corn starch to 1/2 cup water and add to center of pan after pushing all ingredients up the sides to make a sauce. It should thicken quickly. mix all togeter and serve.
Serve over 3/4 cup cooked white Minute Rice
Season individual servings with left over 1/4 cup of soy sauce to taste.
