Seafood Scampi with Chives and Tarragon

Ingredients
8 oz scallops1 cup imitation crabmeat1/2 Tbsp olive oil (or butter)1 Tbsp dry white wine (Chardonnay works well)4 cloves garlic, minced1 tsp chives1 tsp tarragon4 oz Soba Buckwheat noodles
Directions
Make noodles in boiling water according to directions; drain and set aside.

In a wok or saucepan, brown garlic, tarragon, and chives in olive oil. Add scallops and imitation crab meat. Add wine. When scallops are opaque, add noodles. Serves 4.

*Note: you may substitute butter for olive oil.
