Bell pepper pasta

Ingredients
2 Bell peppers (capsicum), diced. Yellow is good but recipe works with any colour.1 Medium onion, diced.2 tspn Olive oil (can use less if desired)250ml white wine (optional)1 chicken stock cube (use to taste)200g pastaParmesan cheese to taste
Directions
Recipe is for 2-3 servings

Heat water for pasta.
Finely dice bell peppers and onion.
Add oil to a deep sided frying pan, and once hot add onions. Cook until softened and browning.
Add bell peppers and cook until softened.
Add wine and allow to reduce over a medium heat.
If desired add chicken stock cube (if using a liquid stock, omit wine)

Once pasta is cooked, add to sauce and toss. Add some parmesan cheese and serve hot.
