Chicken Posole

Ingredients
1 minced garlic clove1/2 c. diced onion1/2 c. diced celery1/2 c. diced green peppers2 Jalapeno peppers, seeded and chopped1 14.5 oz. can Hominy1.4 lb. chicken thighs cut into bite size pieces1 c. Swanson's Natural Goodness Chicken Broth (fat free, 33% less sodium)1/2 tsp ground cumin1/4 tsp black pepper1 lime cut into 4 wedges
Directions
In Dutch oven, saute garlic, onions and chicken pieces in canola until onions are transluscent and chicken is lightly browned. Add celery and peppers, stirring while the vegetables become crisp tender. Add remaining ingredients except lime. Cover, reduce heat to simmer.

Serves four. Spoon into bowls and serve with wedge of lime. Garnish with fresh cilantro if so desired.
