Stuffed Avocados

-1 ripe avocado, halved and pitted-1/2 can black-eye peas (I use Goya's 15.5-oz cans), drained and rinsed-3.5 oz. cherry tomatoes, halved-1 scallion or green onion, sliced finely-1 tbsp. fresh basil, chopped finely-1/2 tbsp. cider vinegar-Lemon wedges
-Halve and pit the avocados, keeping them in their skin, and place one each on two plates.
-Squeeze the lemon wedges over the avocado halves, sprinkling them with the juice.
-In a bowl, mix the black-eye peas, cherry tomatoes, scallion, basil and cider vinegar.
-Scoop the mixture evenly into the two avocado halfs.
-Enjoy!
