Tofu Quiche

Ingredients
1/2 cup water 1/2 cup raw cashews8 oz. tofu1 tsp. salt1/4 cup cornstarch1 tsp. basil1/2 cup green bell pepper, chopped1/2 cup red bell pepper, chopped1/2 cup diced onions1/2 cup diced carrots1/2 cup olives, sliced1/2 cup broccoli
Directions
Combine the water and cashews in blender and blend until very smooth. Add tofu, garlic, salt, cornstarch and basil. Blend until smooth. Pour into a bowl and add the vegetables. Mix. Pour into unbaked pie shell. Bake at 350 degrees for 30 minutes. Serve hot.

Pie Crust
1 cup whole wheat flour
1 cup rolled oats, blended
1 tsp. salt
1/2 cup water
1/4 cup olive oil

Combine all. Don't over mix. Roll out between wax paper or plastic wrap. Place is sprayed pie pan.

    I made a modified version with a whole wheat crust, spinach instead of green pepper, and a little goat cheese crumbled on top when it was done baking. It was surprisingly good. It could still use a little more seasoning, but the texture and all the veggies was really good. - 10/17/09
