Fluffy Speckled Peanut Butter dip

Ingredients
1 Jell-O Sugar Free Vanilla Pudding Snack3/4 cup Cool Whip Free, thawd¼ c Reese’s Puffs cereal1 tbsp reduced-fat peanut butter, room temperature
Directions
Place cereal in a sealable plastic bag. Using a rolling pin or a can, crush cereal completely by rolling it firmly over the bag on a flat surface. Set aside.

In a bowl, combine pudding and peanut butter, stirring until completely mixed.

Add Cool Whip, vanilla extract, and sweetener, stirring until mixed well.

Stir in cereal crumbs and place bowl in the fridge. Refrigerate for at least 10 minutes before serving.

    I found this recipe in the wonderful "Hungry Girl" cookbook with a couple of additions to the above. Add 1/4 tsp vanilla extract and 1 tsp. Splenda. This is a FANTASTIC dip -- I have my apple slices with it for a wonderfully sweet, yet healthy snack. Highly recommended! - 6/30/10
