Oat and Rice Flour Pancakes

Ingredients
1 cup oat flour1 cup brown rice flour1 can pumpkin2 eggs1 tsp bkg soda2 tbsp oil2 tsp cinnamon1/4 tsp cloves1 tsp ginger1/2 tsp nutmegwater
Directions
Stir all ingreds together in mixing bowl. Add enough water to pancake batter consistency.

    I added 2 C water and got 18 pancakes using 1/4 C of batter per cake. That brings the calories to 80 per cake. I enjoyed them but my family wasn't as thrilled. - 4/14/12

    By the way, oats contain gluten. You could probably substitute rice flour and get the same result. I suggest modifying the recipe or remove it from the gluten free category. Alot of folks new to gluten allergy may not realize that oats are no-no's (unless package is specifically marked gluten-free). - 6/3/09
