Espresso Spread:8 oz. fat free cream cheese, softened2 T. sugar1/2 t. instant coffee granules1/2 t. vanilla extract1/4 c. miniature semi sweet chocolate chipsMuffins:1 c. all purpose white flour1 c. whole wheat flour3/4 c. cugar2 1/2 t. baking powder1 t. ground cinnamon1/2 t. salt1 c. skim milk2 T. instant coffee granules2/3 cup unsweetened applesauce2 T. butter, melted1 egg, beaten1 t. vanilla extract1/2 c. miniature semi sweet chocolate chips
In a food processor or blender, combine the spread ingredients, cover and process until well blended. Cover and refrigerate until serving.
In a bowl, combine flour, sugar, baking powder, cinnamon and salt. In another bowl, stir milk and coffee granules until coffee is dissolved. Add butter, applesauce, egg and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in chocolate chips. Fill greased or paper-lined muffin cups two thirds full. Bake at 375 for 17 - 20 minutes or until muffins test done. Cool for 5 minutes before removing from pans to wire racks. Serve with espresso spread.
