Whole Grain Blueberry Quick Bread

3/4 cup whole wheat pastry flour1/4 cup graham flour1/4 cup rice flour1/4 cup spelt flour2 tsp. baking powder1/2 tsp. baking soda1/4 tsp. salt1/2 cup nonfat, plain yogurt1/2 cup unsweetened applesauce1 egg white1 tbsp. flaxseed meal mixed with 3 tbsp. water1 tsp. vanilla1 cup fresh blueberries
Preheat oven to 350 degrees.
Mix the flours, baking powder, baking soda, and salt in a large bowl.
In a separate bowl, combine the yogurt, egg white, applesauce, flaxseed/water mixture, and vanilla.
Add the wet ingredients to the dry and fold together gently. Stir in blueberries.
Bake in a greased loaf pan for about 45 minutes.
