Tuscan Peas

Ingredients
4 tablespoons extra-virgin olive oil1 Spanish onion, cut into a fine diceSmall pinch granulated sugar 1 teaspoon chili flakes (more if you like spicy) 1 tablespoon tomato paste (can use paste in a tube) 2 cups fresh green peas (can substitute frozen or canned) Salt
Directions
In a large saute pan heat the oil until smoking. Add the onion and cook until translucent, about 6 to 8 minutes. Add the chili flakes and tomato paste and cook until rusty looking 4 to 5 minutes. Add a very small pinch of regular sugar at this point. Add the peas and cook until very tender, 8 to 10 minutes. Season with salt. Serve hot or at room temperature.
You can use frozen or canned peas-frozen is a little better with texture.

    This is a great recipe, but I think it should be four servings and not one serving. I also cut the crushed red pepper in half. That is a personal preference. Also I did not cook the peas as long as I like them a bit crisper - 5/20/11
