Eggless Nut Cake

Ingredients
1 1/2 cup brown sugar1 cup cold water1 1/2 cup shortening or corn oil1 cup raisins1 tsp cinnamon1/2 tsp ground cloves1/2 tsp salt1/2 cup crushed nuts1 tsp baking soda1 tsp baking powder1 3/4 cup sifted flourFrosting:8 oz cream cheese (softened at room temperature)2 cups powdered sugar1 stick melted butter1 tsp vanilla extract
Directions
Mix sugar, shortening, water, raisins, spices, and nuts in sauce pan and
bring to a boil for seven minutes. COOL

Stir baking soda into 4 tbsp (1/4 cup) warm water and add to mixture. Mix
in flour and baking powder. Beat well. Pour into greased 9" x 13" cake pan
(or two smaller pans). Bake for thirty minutes at 375 degrees F.

Frosting:

Mix together and spread over cooled cake.

    I have made this for years (I am allergic to eggs!) but made it with 1/2 cup butter and no nuts. Using the oil makes it a little healthier. Adding one small chopped apple makes it even more moist and omitting the frosting makes it even healthier!! - 6/6/09
