1 lb ground turkey (98% lean)1 large onion, chopped3 cloves garlic, minced3 stalkes celery, minced1 red pepper, oven roasted, choppedfresh oreganofresh basilfresh thymefresh parsley, all to taste2 large (28 oz) cans diced tomato, no salt addedpepper, or mrs dash, italian seasoning to taste
In a stock pot, heat 2 tbsp olive oil and brown ground turkey. In the meantime, cut pepper in half and seed. place cut side down in a foil pouch and drizzle with remaining olive oil. place in broiler (500 deg) just until skin begins to blacken. Chop onion, celery and garlic, and mix with turkey until translucsent. Remove pepper from oven and place in a zip top bag for about 5 min to sweat. the skin will come right off, then chop. Add pepper to turkey mixture. Add canned tomatoes and simmer. about 1/2 way through the simmer, add fresh herbs and season to taste. Let simmer until thickened. If needed add a small amount of unsalted tomato paste to thicken to taste! Yield = 9 cups, serving size 1/2 cup
