Ingredients
2 large, whole wheat pita pockets (I used Joseph's large, 120 calories each. The calculator wouldn't let me choose that so I did the best I could)~ 3 cups romaine lettuce, shredded2 plum tomatoes, chopped 1 ear sweet corn with kernels removedthinly sliced red onion, to taste. (I used about half of a very small onion for two sandwiches)1/2 cup chopped cucumber, with peelseveral sprigs of fresh cilantro, chopped~ 1/2 cup feta cheese (I used a brand with 180 calories per half cup, which is low versus the calorie counter here)drizzle of olive oil (~ 1/2 tablespoon)
Directions
Cut the pita pockets in half and set aside. Into a medium bowl put the shredded lettuce, thinly sliced red onion, chopped tomato, sweet corn, chopped cucumber, and chopped cilantro. Toss lightly. Sprinkle feta cheese over the top. Drizzle olive oil over the top, mix gently but thoroughly to distribute the cheese and the oil. Hold the pita pockets open and stuff each one with one quarter of the mixture. Serves 4.
