Crock pot chicken curry

6 Skinless boneless chicken breasts1 can diced tomatoes1 medium onion, chopped4 cloves garlic, minced2 C water1 tbsp extra virgin olive oil1.5 tsp salt1.5 tsp pepper5 tsp curry powder (mild)
Cut the chicken into 1 inch pieces, trimming all fat in the process. Toss chicken with olive oil, salt and pepper and let sit for about 15 minutes.
Place chicken in the crock pot. Add tomatoes, water, onion, garlic and curry powder. Cook on low for 8 hours, then crack the lid and turn to high for 30 minutes to let the sauce thicken and reduce slightly
Makes 7 1-cup servings

This was a super duper easy recipe!! I enjoyed the mild heat from the curry and the chicken was really tender. I will make this again with some slight changes. A little less curry powder, add a tiny bit of chili powder and instead of water and salt I'll add low sodium chicken stock. - 6/23/09

This smelled SO good cooking away all day in my kitchen. I kind of over did it on the curry. Oops! I mistook tsp for tbsp when I was prepping.. thankfully I cut it back to 2 instead of 5! LOL I also added mushrooms and thickened it some with sour cream and a bit of corn starch to make it creamy. - 7/23/12

Not as much flavor as I expected...but then again I used less salt (as I usually do) and upon the recommendations of other members, I also used less curry powder by 1 tsp. Next time will make as the recipe says and may also add red pepper flakes. Definitely good! Even my picky niece loved it! - 8/2/09
