Apple-Oat and Peanut Butter Bars

Ingredients
For the crust:4 cups rolled oats1/2 cup all-purpose flour1/2 teaspoon salt1 T lemon zest10 T peanut butter3 T agave nectar2 T honey1 T vanilla extract1/4 cup waterFor the filling:1 med apple, grated1 teaspoon cinnamon2 T lemon juice2 T agave nectar2 T honey
Directions
Preheat oven to 425 degrees F.


Line a 13 x 9 inch baking pan with parchment paper.


In a small bowl, mix together all ingredients for the filling. Set aside.


In a large bowl, stir together oats, flour, salt, and lemon zest. Rub the peanut butter into the oat mixture with your fingers until combined. Now add agave nectar, honey, vanilla extract and water. Stir all ingredients together until well mixed. The dough should feel firm yet sticky.


Wet your hands and press 1/2 the dough into the prepared pan. Now spread the filling over the oat mixture. Pour any accumulated liquid right over the pan. Top the apple filling with the remaining dough.


Bake for 15 to 20 minutes in preheated oven, checking for golden brown color on top. Remove from oven and let cool on wire rack. Cut into 24 bars. Store in airtight container for up to one week.
