* 2 Tablespoons melted butter * 1/4 cup confectioners' sugar * 1 large egg white * 1 teaspoon vanilla extract * Pinch of salt * 1/4 cup all-purpose flour * 14 fortunes written on 3" x 1/2" paper
Before you start baking, prepare your fortunes by consulting a book of inspirational quotes or create your own. Keep the fortunes short, about one sentence long. Use a pen (a calligraphy pen looks great) or your computer and printer to print the messages. One fortune per cookie is customary, but two might bring more excitement!
Preheat oven to 375 degrees F.
Combine all ingredients in a small mixing bowl. Whisk together with a wire whisk until very smooth.
Oil the cookie sheets with nonstick cooking spray.
Using a tablespoon, drop batter for three cookies on the cookie sheet, making sure they are 4 inches apart. With the metal spatula spread the dough evenly into 3-inch circles.
Bake the cookies in the oven for 4 minutes until golden brown on edges. Wearing gloves, remove a cookie from the cookie sheet with the metal spatula, place a fortune in the center, fold the cookie in half over the fortune, and press edges together. Gently fold the cookie in half in the other direction and place the seam side down in a muffin tin to cool and hold its shape.
Repeat process for the other two cookies remaining on the cookie sheet. (Note: bake only three cookies at a time because they cool fast, and you will need the time to mold them before they harden.)
Repeat until all the cookies are done, using a cool cookie sheet each time. (A heated cookie sheet keeps the cookies from cooking evenly.)
