Chicken and Salsa

Ingredients
1 tablespoon Olive Oil1 medium onion, chopped3 cloves of garlic, crushed16 oz boneless chicken breasts (4 breasts)1 jar (16 oz) jar Salsa (mild, medium or hot)1 can (10.75 oz) chicken broth4 oz shredded cheddar cheese
Directions
In large frying pan, saute onions and garlic in oil until onions are tender. Add chicken broth and salsa and bring to a boil. Add rice and chicken, pushing chicken under liquid. Cover, turn heat to low and simmer until rice has absorbed all the liquid (about 1/2 hour). Sprinkle with shredded cheddar cheese.
