Brown Rice Salad

Ingredients
3 cups brown rice (cooked)1 c cucumber, diced1 c zucchini, diced1 oz of cubed mozzarella1/2 c almonds1/2 c dried cranberries1/4 c. olive oil1/4 c. balsamic vinegar
Directions
To make the vinagrette: mix together oil and vinegar, set aside.

Mix together cooked rice, vegetables, cheese, nuts and cranberries. Dress with vinagrette and toss well.
