Ingredients
1 CUP QUINOA, WASHED AND DRAINED2 CUPS WATER1/4 C OLIVE OILJUICE OF 2 LIMES1 t ground CUMIN1/2 t RED PEPPER FLAKES1 CAN BLACK BEANS, RINSED1 1/2 CUPS GRAPE TOMATOES, HALVED1/4 C FRESH CILANTRO, CHOPPEDSALT AND PEPPER TO TASTE
Directions
COOK QUINOA ACCORDING TO PACKAGE DIRECTIONS. LET COOL.
IN A SMALL BOWL, WHISK TOGETHER OLIVE OIL, LIME JUICE, CUMIN AND RED PEPPER FLAKES.
COMBINE COOLED QUINOA, BEANS, AND TOMATOES IN A LARGE BOWL. DRIZZLE DRESSING OVER SALAD AND TOSS IN CILANTRO, SEASON WITH SALT AND PEPPER.

    Haven't tried this yet, but I plan to. I'm going to add some fresh diced onion (probably green). I'll most likely garnish with avacado slices. It sounds yummy. Thanks for sharing. - 8/6/10

    I made a little different version of this salad, omitting the oil and limes. Mine had garlic and onion cooked in a little olive oil and more black beans. The tomatoes would have been a good addition. Overall, it was absolutely great. A good side dish with grilled Tilapia. - 7/22/09
