Black-eyed pea and kale soup

Ingredients
1 10 ounce bag frozen black eyed peas1-1.5 cups chopped kale1 approx. 15 ounce can of stewed tomatos1.25 cups choped onion1 cup diced ham4 cups chicken broth (fat free, low sodium)1 tbsp your favorite hot sauce
Directions
spray bottom of soup pot with cooking spray, sautee onions and ham until onions start to brown. Stir in black eyed peas, chicken broth and tomatos. Bring to a boil, then simmer uncovered over medium heat for 30-45 min. Stir in kale and hot sauce, continue cooking for 10-15 min. Season to taste. Enjoy.

    We ate this on New Year's Day it was delicious! We used a little tabasco in each bowl instead of adding to the whole pot-worked perfectly. Very very good! - 1/2/11
