Microwave Eggplant dip

Ingredients
Eggplant, fresh, 1 eggplant, peeled (yield from 1-1/4 Olive Oil, 2 tbsp *Lemon Juice, 1 lemon yields Granulated Sugar, 1 tsp Peppers, sweet, red, raw, sliced, 1 cup
Directions
Cut the eggplant in half length-wise then microwave on full power for up-to 8mins (until soft). Microwave red peppers until soft. Add all ingredients to the blender and blend to desired consistency. Add chilli for a sweet & spicy flavour or yogurt for a creamier flavour (optional).
