Hatch Green Chile Enchiladas

Ingredients
Sauce1 can cream of chicken soup1 can Hatch Green Chile Enchilada Sauce (14 oz)1 cup sour cream (reduced fat)Filling2 cups shredded cheddar or montery jack cheese (14 oz -- nutrition information uses 2% sharp cheddar)2-3 cups diced, cooked chicken1/2 cup chopped onion12 corn tortillas
Directions
To make sauce:
Combine soup, enchilada sauce, and sour cream in saucepan. Heat thoroughly. Set aside.

To make filling: Combine cheese, chicken and onions in bowl. Soften tortillas by dipping in soup mixture. Spoon sauce and filling on each tortilla; roll up. Place 12 tortillas seam side down in a greased 9x13 baking dish. Pour remaining sauce on top.

Bake at 350°F until bubbly (20-30 minutes).

    Oh, I have. I just moved away from Taos. The food is the only thing I miss about NM. I have a chile supplier, at least. :)
