Puffy omelet for one

2 eggs, separated1 tbsp light sour creampinch herbes de provence2 wedges light laughin cow cheese1/3 cup cooked spinachpinch ground mace
Beat up the spinach with the cheese, season with salt, pepper, mace.
In a separate bowl, beat the egg yolk with the sour cream, season with pepper.
Beat up the egg white with some salt until soft peaks form.
Preheat a nonstick pan over medium high heat. Spray it with cooking spray.
Fold really gently the egg yolks into the egg whites.
Put the egg mixture in the pan, and add the spinach mixture in the middle of the omelet.
Cook for about 2 minutes, then fold. Make sure its hot in the middle, without overcooking the omelet.
