Paolo's Chicken

* 1 large vidalia or other sweet onion* 3 1/2 lb. whole chicken, skin left on* Lemon Juice, 1/4 fl oz * 2 whole Bay Leaves or Basil Leaves2* 0 sprays of Smart Balance spray, or about 1/4 of a serving of any low fat margarine* Oregano, ground, 1 tsp.* Rosemary, dried, 1 tsp.* Garlic, 1 tsp. or 2 finely minced cloves* Basil, 1 tsp.* Pepper, black, 1 tsp * Kosher Salt, 1/4 tsp
* Preheat oven to 350 degrees F.
* Spray the inside of a baking pan with nonstick spray.
* Peel onion and slice in thick, flat rounds. Scatter rounds on bottom of baking pan. You're making a bed for the chicken.
* Take chicken out, cut off neck and remove giblets. Rinse inside and out and pat dry.
* Set chicken, breast-side up, on top of the onions. Don't worry if it's a little uneven.
* Spray or drip lemon juice inside chicken cavity and place bay leaves inside. If you don't have bay leaves, fresh basil leaves or fresh garlic cloves make fine substitutes.
* Spray the chicken with the Smart Balance spray or rub on margarine if you don't have the spray on hand. You're not using much; this is just to make a slightly sticky surface.
* Combine the remaining ingredients and crush them in your hand. Sprinkle liberally over chicken, covering as much as you can. Don't worry if there are uneven or bald spots, or if some gets on the onion bed.
Bake in a 350 degree oven for about 20 minutes per pound. A 3 1/2 pound chicken took 1 hour and 20 minutes. Make sure that the breast is 165 degrees Farenheit and the leg is 170.
Turn off oven and leave chicken inside, uncovered, for about 20 minutes to let it rest and redistribute the juices. Remove and discard bay leaves before serving. And don't forget to serve the onions! They're incredible over mashed potatoes!
Makes 6 4-ounce servings. The nutritional information includes half of the chicken serving with skin, so if you don't eat the skin, you'll save fat and calories over the stated nutritional information.
