Pesto Salmon or Chicken Stacks

Ingredients
Olive oilDash of Salt & Pepper - to tasteDash of Garlic Powder - to taste1 cup total sliced red, yellow, orange bell peppers1/2 onion, sliced1 Salmon filet2 slices tomato2 slices fresh mozzarella cheese (soft, wet kind)2 tble prepared pesto
Directions
Preheat oven to 425
Lay the onion slices on a baking sheet and drizzle with olive oil. Bake 10 minutes, then lay peppers on top and toss together and add salt and pepper. Bake another 10 minutes or until veggies are soft.

Meanwhile salt & pepper and dash on garlic powder to both sides of salmon. Drizzle olive oil into a skillet and cook salmon for about 5 minutes on each side.

Then place tomatoe and cheese slices on salmon, cover and cook for 5 more minutes.

Lay the onion/pepper mixture evenly between two plates. Lay salmon topped with tomatoes and cheese on the onion/peppers. Sponn 1 tbl pesto on each stack. Eat and enjoy.

    This recipe was good I used fat free mozarella shredded cheese instead which didn't take away from the flavor at all so this will be made again. - 9/26/09

    I made this with salmon the other night and really enjoyed.My husband wasn't a huge fan... thought the pesto detracted from the taste of the salmon.I will definitely be making this again, but probably will use chicken instead of salmon. - 6/14/09
