Yellow Peppers (bell peppers), 2 pepper, large (3-3/4" long, 3" dia) (remove)Onions, raw, 1 slice, large (1/4" thick) (remove)Garlic, 5 cloves (remove)Chili powder, 2 tsp (remove)*365 Organic Diced Tomatoes, 3.5 cup (remove)Bush's, Black Beans, 3.5 cup (remove)*Green Giant Whole Kernel Sweet Corn, 2 cup (remove)Salt, 2 tsp (remove)*Lucerne Fat Free Sour Cream, 8 tbsp (remove)Cilantro, raw, 8 tbsp (remove)Lime Juice, 1 wedge yields (remove)Scallions, raw, 2 medium (4-1/8" long) (remove)Avocados, California (Haas), 1 fruit without skin and seeds (remove)
Saute peppers in Pam, add onions and saute until browning. Add tomatoes and beans, simmer 10 mins. Stir in corn and season with salt. Puree sour cream cilantro and garlic with lime juice until smooth. use as a garnish with a lime wedge, scallions and avocado.
