Portobella Mushroom Tuna Melt

4 Portabella mushroom stemmed, gills removed2 tabs.olive oil1 (5oz) can tuna in water1 Celery finely chopped1/2c Flat parsley2Tabs. fresh lemon juice4 deli sliced thin Swiss Cheese4 slice tomatoes1/2c mixed baby greens
Preheat broiler. Brush mushrooms with olive oil, than place in the oven turning once until softened and cooked through,around 10 minutes.
In a bowl combine tuna, celery, parsley, lemon juice, and remaining oil. Salt and pepper to taste.mushrooms, divide tuna mixture among mushrooms and spread evenly. Top with swiss cheese place back in to broiler to melt cheese.
Than top each mushroom with a tomato and 2 tablespoons green and serve immediately.
Serves 2.
