Low-fat Creamy Tomatillo Dressing

1 1/2 C. reduced-fat sour cream1 packet ranch dip mix4 med. tomatillos, stemmed & quartered1/4 - 1/2 t. crushed red pepper flakespinch salt2-3 T. milk to thin, if needed
Directions
Place ingredients in blender. Puree until smooth & well-combined. Makes approx. 3 C.

    I'm ordinarily not much of a fan of creamy dressings, but a friend made this for me and it knocked my socks off. It makes a lovely dip for raw veggies and makes a salad seem special. I'm thinking it would be great as a change of pace for a cole slaw dressing, too. - 10/18/10
