Apple Rice Casserole

Ingredients
2 cups white rice1 container (16 oz) of light sour cream1/3 cup of sugar1 TB cinnamon1/2 cup of raisins (substitute cranberries if you like)2 medium apples, grated
Directions
Makes 4 1-cup servings

Cook the white rice according to package directions. When rice is almost done:

Preheat oven to 350.

Mix the sour cream with the sugar and the cinnamon until smooth. Taste. If not lightly sweet, add more sugar.

Grate the apples. Mix the apples, raisins, rice, and sour cream mixture together into a casserole dish.
Bake for about 20 minutes.
