12 ounces chicken breasts, no skin cut into 1 1/2 inch cubes1/4 teaspoon grill seasoning (not included) 1/2 lemon zested and juiced2 teaspoons red wine vinegar1 teaspoon dried oregano1 clove garlic, minced2 teaspoons olive oil1 green bell peppers, seeded and cut into 1 1/2" pieces1/2 large yellow onion, cut into 1 1/2" pieces8 oz mushrooms whole1 zucchini sliced 1/4" thick1 cup grape tomatoesSalt and pepper to tasteIn a bowl add grill seasoning, garlic, lemon zest, lemon juice, vinegar and whisk in oil. Add chicken and toss to coat. Set aside.Prepare vegetables and spray with non-stick spray. Season with salt and pepper to taste. Set asidePlace chicken cubes onto broiler pan sprayed with non-stick spray and broil 5-7 minutes turn chicken over and add vegetables to another part of the broiler pan and continue to broil 5-7 minutes. Add grape tomatoes and continue to cook until skins begin to burst on tomatoes. Transfer vegetables to a plate Add chicken on top. Serve with 1/2 cup brown rice.Makes two servings.
